It’s been a few days since I’ve posted but the fall weather is back and so am I with some recipes that are guaranteed to make you feel cozy and warm. Honey Balsamic Carrots is first on the list, making a great addition to any meal. They are light but full of flavor! Add these as a side to your Thanksgiving dinner and everyone will be impressed!
Ingredients:
- 2 cups baby carrots, washed & patted dry
- 1 tbsp olive oil
- 1/3 cup balsamic vinegar
- 1 tbsp honey
- 1/4 tsp garlic powder
- 1/2 tsp fresh ground ginger or ginger powder
- 2 sprigs of sage
- salt & pepper to taste
- tin foil
- roasting pan or casserole dish
Steps:
- Preheat your oven to 325 degrees
- Line your dish with tin foil (easier cleanup!)
- Add the carrots to the dish
- In a small bowl, mix the balsamic, olive oil and honey. Add to the carrots and stir to coat
- Sprinkle the garlic, ginger, and a few pinches of salt and pepper; mix
- Add two sprigs of sage
- Bake for 15 minutes, mixing once in between
- After 15 minutes add another drizzle of balsamic over the top of the carrots
- Bake for 10 minutes and remove from oven
