

Ingredients:
- 1 lb cod
- 2 cups chicken or vegetable stock
- 1/2 cup kalamata olives, pitted & halved
- 3/4 cup cherry tomatoes, halved
- 1 small shallot, sliced
- 2 cups spinach
- Juice from 1/2 lemon
- 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp garlic powder
Kitchen Tools:
- 8×8 Baking dish
Instructions:
- Preheat your oven to 425 degrees
- Add the cod to the baking dish (cut in half to fit if needed)
- Add the stock
- Sprinkle over the fish & stock the salt, garlic & red pepper flakes
- Add the olives, tomatoes & lemon juice
- Bake at 425 degrees for 18-20 minutes
- Serve with the spinach, bread or rice!
