Lemon Cod

Ingredients:

  • 1 lb cod
  • 2 cups chicken or vegetable stock
  • 1/2 cup kalamata olives, pitted & halved
  • 3/4 cup cherry tomatoes, halved
  • 1 small shallot, sliced
  • 2 cups spinach
  • Juice from 1/2 lemon
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1 tsp garlic powder

Kitchen Tools:

  • 8×8 Baking dish

Instructions:

  • Preheat your oven to 425 degrees
  • Add the cod to the baking dish (cut in half to fit if needed)
  • Add the stock
  • Sprinkle over the fish & stock the salt, garlic & red pepper flakes
  • Add the olives, tomatoes & lemon juice
  • Bake at 425 degrees for 18-20 minutes
  • Serve with the spinach, bread or rice!
